Ismail Fliss is a professor and head of the Department of Food Science at Université Laval. He held an industrial research chair focusing on the metabolic activities and functionality of bio-protective lactic acid bacteria (METABIOLAC, $2.8 million). He co-leads an international project funded by the International Development Research Centre and the UK Department of Health and Social Care, which aims to use bacteriocins as alternatives to antibiotics in poultry production ($1.8 million). He is also scientific director of the International Associated Laboratory for the Bioproduction of Natural Antimicrobials (LIAAN).
Dr. Fliss is recognised worldwide for his work on the identification, purification and application in the food, medical and veterinary sectors of natural antimicrobial compounds, including bacteriocins from lactic acid bacteria. Dr Fliss is co-author of 246 scientific articles and holds five Canadian and international patents.
